Ingredients:

  • 1 pound (450g) ground beef or Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (14.5 oz) tomato sauce
  • 4 cups (946ml) beef or vegetable broth
  • 1 tablespoon Italian seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups (180g) uncooked pasta (such as fusilli or rotini)
  • 1 cup (240ml) water
  • 1 cup (240ml) whole milk or heavy cream
  • 1 cup (100g) shredded mozzarella cheese
  • 1/2 cup (50g) grated Parmesan cheese
  • Fresh basil leaves, chopped (for garnish)
  • Ricotta cheese (optional, for serving)

Instructions:

In a large pot or Dutch oven, brown the ground beef or Italian sausage over medium heat until no longer pink. Drain excess fat if necessary.

Add the diced onion to the pot and cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes.

Pour in the diced tomatoes, tomato sauce, beef or vegetable broth, Italian seasoning, dried basil, and dried oregano. Season with salt and pepper to taste. Bring the soup to a simmer.

Add the uncooked pasta to the pot and stir well. Cook the soup uncovered for about 10-12 minutes, or until the pasta is al dente, stirring occasionally.

Stir in the water and whole milk or heavy cream. Allow the soup to simmer for an additional 2-3 minutes.

Remove the pot from the heat and stir in the shredded mozzarella cheese and grated Parmesan cheese until melted and well combined.

Taste the soup and adjust seasoning if necessary.

Ladle the soup into bowls and garnish with chopped fresh basil leaves. Serve hot with a dollop of ricotta cheese on top, if desired.

Enjoy your delicious lasagna soup!
