  • 1 can (14 ounces) diced tomatoes
  • 1 can (15 ounces) tomato sauce
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Optional toppings: shredded cheddar cheese, sour cream, chopped green onions, chopped fresh cilantro, diced avocado


In a big saucepan or Dutch oven, warm the olive oil over medium heat. Add the chopped onion and simmer for approximately 5 minutes, or until softened.

To the saucepan, add the minced garlic, chopped green and red bell peppers, and jalapeño pepper (if using). Cook for a another five minutes, stirring now and again.

Transfer the veggies to one side of the saucepan and fill the empty space with ground meat or turkey. Cook until the meat is browned and well done, breaking it up with a spoon as you go.

Add the dried oregano, chili powder, ground cumin, paprika, kidney beans that have been drained, black beans, tomato sauce, chopped tomatoes, and black pepper.

After bringing the chili to a simmer, turn down the heat. For at least thirty minutes, simmer it covered and stir from time to time.

If necessary, taste and adjust the seasoning. You may cook the chili uncovered for a little while longer to decrease the liquid if you’d like it thicker.
