  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste
  • 1/2 teaspoon paprika (optional, for extra flavor)
  • 2 cups tomato juice or vegetable broth (optional, for a thinner consistency)

For the Fresh Vegetable Medley:

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Instructions:

For the Gazpacho:

Chop the tomatoes, red bell peppers, cucumber, red onion, garlic, olive oil, red wine vinegar, salt, pepper, and paprika (if using) and put them in a mixer or food processor. This will make the gazpacho.

Mix until it’s smooth. You can add tomato juice or vegetable broth until the right thickness is reached if you want a lighter consistency.

Check the spices and make changes if needed.

Put the gazpacho in the fridge for at least an hour before you serve it.

For the Fresh Vegetable Medley:

Put the diced cucumber, sliced red onion, chopped parsley, and cherry tomatoes in a bowl.
Add a little extra virgin olive oil and red wine vinegar on top.

Add pepper and salt to taste.

Sprinkle to mix.

Spoon some of the fresh veggie mix on top of each bowl of chilled gazpacho.

This food is not only bright and lively, but it also tastes great. You can eat it as a beginning or as a small meal by itself.
